It's been a VERY long winter of trying desperately to find enough food to fill my belly (I'm blessed with good metabolism!) I think I've literally eaten more orange colored root vegetables in the last 6 months than in my entire life combined. Really. Serious. Pretty much daily. It's a wonder my skin hasn't turned orange yet.
So I've sworn off all orange squashy things - including sweet potatoes which I typically love.
I've really given up on most Paleo cookbooks since so many food restrictions make even adapting recipes impossible.
And - confession - I'm a Paleo woman who detests bone broth and organ meats.
My own food preferences and the dietary restrictions have led to being pretty inventive!
And so... on this night of the spring equinox - we've made spring rolls!! And even pan-fried them so they're crispy like egg rolls.
Homemade Paleo Autoimmune Friendly Spring Rolls!! YUM
Wet some tapioca starch "rice" papers until soft and place on parchment paper
Shred carrots and cuke: pull of cilantro leaves, place some kelp noodles in a little bowl; dice up pre-cooked protein source (shrimp, chicken, scallops etc); place some lettuce in a bowl
Assemble rolls by placing a bit of each food item in middle of wraps
Roll up carefully! Fold a top down, fold one side over tucking all food in tightly, fold bottom up, roll tightly closed
For a thicker more "egg roll" kind of skin the roll in a second paper
Heat coconut oil in a pan. I also add 2 drops (literally) of sesame oil. Seeds are a "no-no" if you have gastro autoimmune issues, but I think just two drops will be ok!
Fry in hot oil til slightly crisp; flip and fry other side.
Make a dipping sauce: lime juice, fish sauce, coconut aminos (similar to soy sauce but no legumes), optional bit of almond butter or sesame oil (depending on your autoimmune issue).
