As soon as the warmer weather rolls around I begin craving fresh, raw foods. Here's my favorite spring green juice recipe.
One whole cucumber Several stalks of celery with leaves Thumb sized chunk of ginger (or smaller if you have a really powerful juicer) Two grapefruits (or 1 grapefruit and 1 mandarin) A toast to spring and health! <3

Here's my version of Paleo autoimmune friendly Swedish meatballs. Just ate a plateful and it was so delicious!!
First start the mashed potatoes or cauliflower rice over which you'll serve the meal. I have been able to add back in potatoes (which are not typically an "ok" item) and made garlic mashed potatoes: mash potatoes with skins on, add a lot of garlic infused olive oil, a bit of coconut cream, and salt and pepper. Mash! While potatoes or cauliflower are cooking, make meatballs: About 1 lb of ground beef Several tbsp garlic olive oil Fresh or dried parsley Cinnamon Green onion diced If you can tolerate them, I added just a super small pinch of cloves and about 2 pinches of nutmeg. It adds so much flavor. But leave out if seed spices bother you. Fry in a mixture of bacon grease and garlic olive oil or in pastured lard. Cream sauce: Full can of full-fat coconut milk (I prefer Native Harvest brand b/c of the BPA free cans) Salt and pepper Garlic infused olive oil Green onion Simmer until warm and dissolved. Stir. Take a small bit out and mix in about 2 tbsp of tapioca starch. Wisk thoroughly til dissolved. Add back to pot to thicken. Pour gravy into pan of cooked meatballs with the meat juices in pan. Warm Serve meatballs with sauce over your garlic mashed potatoes or cauliflower rice. Try a big green salad on the side. SO yummy! :) |
